Hello! I'd like to share with you one of the dishes that we often cook at home, and that my family loves. The smoked chicken encocado. A typical dish from my Esmeraldas Province.
Smoked chicken encocado.
Ingredients
4 pieces of smoked chicken.
- Fresh grated coconut (keep the coconut water)
- 1 Tomato
- 1 Pearl onion.
- 1 Green pepper
- Chillanguá
- Garlic paste.
- Cumin
- Pepper
- Salt to taste.
- Annatto
- Cilantro.
- To accompany white rice, cooked green or fried potatoes.
Preparation steps:
- First, chop the chicken and wash with boiled water (to remove the smell of smoke)
- Next, cut the vegetables into squares (onion, green pepper, tomato).
- Then in a blender, place the grated coconut with a quarter of water and blend, then pass through a strainer and reserve.
- In a frying pan, place the oil of your choice and a little achiote, fry the vegetables together with a little garlic paste, cumin, salt, and a little of the reserved coconut water.
- After that, place the chicken pieces in the sauce with a little water and the chillangua broken into small pieces. Let cook until the prey is soft. When the preparation is already drying, add the coconut juice and leave for about 5 minutes.
- Finally, once the time has elapsed, remove from the heat, place chopped cilantro, and serve with a little white rice, along with some cooked greens or patacones.
